Irene’s Cornbread Dressing
Ingredients:.
- 1 big black iron skillet of cooked cornbread
- 3 cups Pepperidge Herb Seasoned stuffing
- 1 cup diced onion
- 1 cup diced celery
- 1 cup chopped green onion
- 1 stick butter or margarine
- 3 cups or more of chicken broth ( I like it very moist)
- Salt and pepper to taste
- 1 tsp sage
- 3 beaten eggs
Directions:.
- Crumble cornbread and add stuffing mix
- Sauté vegetables in butter and broth until just tender. Add cornbread mixture. Add Seasonings
- Add beaten eggs and mix well. Do not over mix. Add extra chicken broth if needed.
- Bake @350 for 40 minutes in a well-greased pan or casserole dish until brown on top. Be careful not to overcook.
